So, you know that disclaimer about the overhead bins? “Please use caution while opening the overhead bins as items may have shifted during travel.” It applies to groceries in the back of an SUV, too! I bought the new Litehouse Opa yogurt-based dressing for a strawberry spinach salad I was whipping up. I was so eager to try it. Then…smash. Out rolled the bottle from my Jeep onto the cement floor of the garage. Two issues plagued me.
1. It was a mess with embedded shards of glass.
2. I really wanted that DAMN dressing.

Time for Plan B: Clean up mess and Google recipe.

Plain Yogurt (Greek or Iceland) is a staple in my refrigerator. I found a few recipes online. After suiting it to meet my needs and ingredients on-hand, this is what I came up with. I put all the ingredients in a mason jar, turned up my jam and danced around the kitchen shaking the jar like a maraca. It was fabulous on a quick salad of power greens, strawberries, onions and gorgonzola. It’s low-cal and it even has a couple grams of protein and healthy fat. With a little creativity, you could swap out your sweetener and edit your spices to invent some pretty fantastic, healthy dressings!

Strawberry Yogurt Salad Dressing

1/2 c non-fat Greek or Icelandic yogurt
1 T olive oil
2 T apple cider vinegar
1 1/2 T strawberry jam (mom & dad’s homemade)
1 T Fairlife ultra-filtered fat-free milk (for extra protein and no added calories.)  😉
1 T water (plus or minus depending on the consistency you prefer your dressing.)
Salt & Pepper to taste
Serving size: 2 T
